Recipes from the Flores Sea

Kue Jaya – Enak sekali! - (Jaya cake – Delicious!)

Melati, one of our guests who joined us for the first trip of our Komodo season, was a bit of a whizz in the kitchen and during her 3 day stay whipped up a batch of a delicious chocolate cake/brownie for all the guests and staff. Considering the Jaya is equipped with a tiny, weeny oven, this is pretty impressive.

Here’s the recipe for the lovingly created ‘Jaya Cake’:

Ingredients
Cake mix
150g flour
200g Milo
100g butter/margarine
4-5 eggs
Dash of milk
Juice of 3 x oranges
1 big bar of cashew nut chocolate or any chocolate of your choice
100g finely chopped pineapple
Spoonful of honey
Pinch of salt

Icing sugar
Fine crystal sugar
Lime juice
Hot water

TIP – egg whites help the mixture to rise, so use more if you are not using a raising agent. Egg yolks make the cake more squidgy and moist.

Method
Mix the dry ingredients together, then mix in the egg and butter.

Add milk and orange juice until desired consistency is reached. Then drizzle in the honey and grate the bar of chocolate into the mix.  Finally stir in pineapple chunks.

Transfer the mix to greased tins and place in a preheated moderate to high oven – around 400 watts.

Blend the icing sugar until it becomes fine and powdery. Mix with lime and hot water.

When the cake is ready, drizzle with icing sugar and serve with a tub of fun and a dollop of adventure.
